  • 240 g Oat Flour (2 cups)
  • 1 tsp Bicarbonate of Soda
  • 8 Eggs
  • 160 g Yogurt (⅔ cup)
  • 120 g Cheddar Cheese (grated, ½ cup)

  1. Preheat your oven to 180°C (350°F) and prepare a 2lb loaf tin by greasing or lining it.
  2. In a large bowl, whisk together the eggs and yogurt until smooth.
  3. Add in oat flour and bicarbonate of soda, mixing until just combined.
  4. Fold in the grated cheddar cheese evenly throughout the batter.
  5. Pour the mixture into the prepared loaf tin, smoothing out the top and sprinkling a bit more cheese on top if desired.
  6. Bake for 40-45 minutes until golden brown and a toothpick inserted comes out clean.
  7. Let it cool in the tin for 5-10 minutes before transferring to a wire rack to finish cooling.
