  • 1 teaspoon olive oil
  • 1 cup minced onion
  • ½ tablespoon minced garlic
  • 1 lb boneless, skinless chicken breasts
  • 14 oz can tomato sauce (low or no salt)
  • 1 quart low-sodium chicken broth
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • 15 oz can black beans (drained & rinsed)
  • 1 cup frozen corn (thawed)

Instructions

  1. Mince the onion and garlic; set aside.
  2. Heat olive oil in your chosen pot over medium heat. Sauté onion until translucent (about 5 minutes), then add garlic for another minute.
  3. Add chicken breasts to the pot along with tomato sauce and chicken broth. Stir well.
  4. Season with paprika, black pepper, chili powder, and cumin. Mix thoroughly.
  5. Cook: Instant Pot: Secure lid and cook on high pressure for 15 minutes; natural release for 10 minutes. Crock Pot: Cover and cook on low for 6 hours or high for 3 hours. Stovetop: Bring to a boil, then reduce heat to simmer for about 35 minutes.
  6. Remove chicken from the pot; shred using two forks and return to the soup.
  7. Stir in black beans and corn; heat through for another 5 minutes.
