  • 1 can (15 oz) black beans
  • 1 can (15.25 oz) corn (undrained)
  • 1 can (10 oz) Rotel tomatoes (undrained)
  • 1 package ranch dressing mix
  • 1 tsp cumin
  • 1 Tbsp chili powder
  • 1 tsp onion powder
  • 1 package (8 oz) light cream cheese
  • 2 chicken breasts

Instructions

  1. Drain and rinse the black beans.
  2. Place chicken breasts in the bottom of the crock pot.
  3. Add corn, Rotel tomatoes, and rinsed black beans on top.
  4. Sprinkle ranch dressing mix, cumin, chili powder, and onion powder over the layers; stir gently to combine.
  5. Place the block of cream cheese on top without stirring.
  6. Cover and cook on low for 6-8 hours.
  7. Once done, shred the chicken and return to the chili; stir well before serving.
