  • 4 Medjool dates
  • 120g oat flour (or blended oats)
  • 80g crunchy peanut butter
  • 2 tbsp liquid sweetener
  • 2-4 tbsp milk
  • 60g dark chocolate
  • 1 tsp coconut oil

Instructions

  1. Prepare the dates by cutting them in half and removing pits.
  2. In a mixing bowl, combine oat flour, peanut butter, liquid sweetener, and start with 2 tbsp of milk. Mix until combined; adjust consistency with more milk if needed.
  3. Divide the dough into 8 portions and wrap each around a date.
  4. Melt dark chocolate and coconut oil together until smooth.
  5. Dip each energy ball into the melted chocolate, allowing excess to drip off.
  6. Place on parchment-lined tray and chill for about 30 minutes until set.
