  • 1 1/2 cups lentils (brown, green, or split red)
  • 1/2 cup + 2 tbsp water
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 cup cornstarch
  • 4 tsp ground flax seeds
  • 2 3/4 tsp baking powder

Instructions

  1. Soak the lentils in water for at least 6 to 24 hours.
  2. Preheat the oven to 400°F (200°C). Grease a 9×5-inch loaf pan.
  3. Blend soaked lentils with water, olive oil, and salt until smooth.
  4. In a large bowl, mix the blended lentil mixture with cornstarch, flax seeds, and baking powder until well combined.
  5. Pour the mixture into the prepared loaf pan and smooth the top.
  6. Bake for about 45 minutes until golden brown and sounds hollow when tapped.
  7. Let cool completely on a wire rack before slicing.
