  • 2 tbsp vegetable oil
  • 3 cloves garlic (minced)
  • 1/4 cup diced onion
  • 1 large carrot (3 – 4 oz)
  • 2 tbsp tomato paste
  • 1/4 cup tomato sauce (optional)
  • 1 1/4 cups lentils (brown or green)
  • 12 oz potatoes (cut into bite-sized pieces)
  • salt
  • black pepper
  • thyme
  • oregano
  • 4-5 cups water or vegetable stock

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Sauté the onion for one minute, then add garlic and carrots, stirring for another 2 to 3 minutes.
  2. Mix in tomato paste, optional tomato sauce, and lentils; cook for one minute before adding potatoes.
  3. Pour in 4 cups of water and stir well. Season with salt, pepper, thyme, and oregano.
  4. Bring to a boil, cover, reduce heat to medium-low, and simmer for about 25 to 35 minutes until lentils are tender.
  5. Taste and adjust seasoning if necessary before serving warm.
