Ingredients

  • 1 tbsp Chia Seeds
  • 100 g Vegan Butter
  • 50 g White Sugar
  • 50 g Brown Sugar
  • 100 g Plain Flour (gluten-free if needed)
  • 10 g Cornflour
  • 1/2 tsp Baking Soda
  • 1.5 tbsp Spirulina Powder
  • 1/4 tsp Salt
  • Optional: 50 g White Chocolate or Macadamia Nuts

Instructions

  1. Preheat your oven to 200°C (350°F).
  2. Combine chia seeds with hot water to create a chia egg and set aside.
  3. Melt vegan butter and whisk in white and brown sugar until smooth.
  4. Mix in the chia egg and vanilla extract thoroughly.
  5. Sift dry ingredients together in a separate bowl; then combine with wet mixture until just mixed.
  6. Fold in chocolate or nuts gently.
  7. Scoop dough into balls on a lined baking sheet, spacing them out.
  8. Bake for 10–12 minutes until edges are golden brown.
