  • 1/2 cucumber
  • 1 avocado

  1. Rinse sushi rice under cold water until clear and cook according to package instructions.
  2. Julienne carrots and cucumber; slice avocado into thin pieces.
  3. On a sushi mat, lay a nori sheet shiny side down. Spread cooked rice evenly, leaving an inch at the top.
  4. Layer fillings—smoked salmon, carrots, cucumber, avocado—over the rice.
  5. Drizzle with sriracha if desired, then roll tightly from the bottom edge using the mat.
  6. Slice each burrito in half diagonally and serve immediately or wrap for later.
