  • 120 g Ground Almonds
  • 60 g Oat Flour
  • 2 tbsp Agave Syrup or Maple Syrup
  • 2 tbsp Coconut Oil (melted)
  • 1 tin Full-Fat Coconut Milk (400ml)
  • 2 Limes (zest and juice)
  • 30 g Cornflour

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a food processor, blend ground almonds, oat flour, agave syrup, melted coconut oil, and salt until crumbly. Press into a pie dish and bake for 10 minutes until lightly golden.
  3. In a mixing bowl, whisk together coconut milk, agave syrup, lime zest, lime juice, cornflour until smooth.
  4. Pour the filling over the cooled crust and bake for another 10 minutes until set. Let cool to room temperature before refrigerating for at least 2 hours.
  5. Slice into pieces and serve chilled.
