  • 4 heads garlic
  • 4 tsp olive oil (divided)
  • 1 yellow onion (chopped)
  • 4 cups vegetable broth
  • 1 cup water
  • 1 cup raw cashews
  • ¼ cup nutritional yeast
  • 4 cups shredded kale
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F. Slice the tops off the garlic heads, drizzle with 1 tsp olive oil each, sprinkle with salt and pepper, wrap in foil, and roast for 40 minutes until soft.
  2. In a large pot, heat 1 Tbsp olive oil over medium-high heat. Sauté chopped onion for about 5 minutes until softened.
  3. Add vegetable broth, water, cashews, nutritional yeast, salt, and pepper; bring to a simmer for about 15 minutes.
  4. Squeeze roasted garlic into the pot and blend until smooth using a blender or immersion blender.
  5. Return the soup to the pot, add shredded kale, and simmer for an additional 5 minutes. Serve hot.
