  • 2 lbs chicken thighs and legs
  • 4 shallots (diced) or 1 medium onion
  • 4-5 sprigs of thyme
  • 2 apples (peeled, cored, and cut into wedges)
  • 400 ml hard dry apple cider
  • 125 ml double cream
  • 1 tbsp olive oil
  • 125g bacon lardons

Instructions

  1. Preheat the oven to 180C/350F.
  2. Pat dry the chicken, sprinkle with salt, then brown in olive oil over medium-high heat. Remove once golden.
  3. Cook bacon until crispy; combine with chicken on a platter.
  4. Sauté shallots and celery in the same pan until soft, then add garlic and brandy.
  5. Stir in flour to create a paste; gradually add chicken stock followed by apple cider. Return chicken and bacon to the pan.
  6. Cover and bake for 30 minutes; uncover and bake for another 30 minutes.
  7. Stir in cream and bake uncovered for an additional 20 minutes before serving with cooked apple wedges.
