  • 2 lb Chuck Roast
  • 2 cups Red or Yellow Onion (thinly sliced)
  • 3 Garlic Cloves (minced)
  • 1 tbsp White Wine Vinegar
  • 1 tbsp Worcestershire Sauce
  • 1/4 cup Tomato Sauce
  • 1 cup Beef Broth
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1/2 tsp Fresh Thyme (chopped, or 1/4 tsp dried)
  • 2 tsp Fresh Parsley (chopped)
  • 1-2 tbsp All-Purpose Flour (or cornstarch)

Instructions

  1. In a bowl, whisk together tomato sauce, beef broth, garlic, thyme, Worcestershire sauce, and white wine vinegar.
  2. Season the chuck roast with salt and pepper on all sides.
  3. Layer half the onions in the bottom of a slow cooker, followed by half the sauce. Place the roast on top and add remaining onions and sauce.
  4. Cook on high for 4 hours or low for 7 hours until fork-tender.
  5. For gravy, mix cornstarch or flour with sauce from the slow cooker over low heat until thickened.
  6. Serve over mashed potatoes and garnish with parsley.
