  1. In a mixing bowl, combine flour, sugar, salt, and baking powder. Cut in the chilled butter until crumbly. Gradually add cold water until the dough forms.
  2. Knead gently on a floured surface until smooth; chill in the fridge for at least 30 minutes.
  3. Prepare the fruit filling by cooking chopped fruit with sugar over medium heat until thickened.
  4. Roll out the dough to ⅛-inch thickness and cut into circles.
  5. Place filling on each circle, fold over, seal edges securely, and crimp.
  6. Heat oil to 350°F (175°C) and fry pies until golden brown on both sides. Drain on paper towels.
