  • 1 egg (or 1/4 cup vegan yogurt)
  • 40g coconut sugar
  • 150g oat flour
  • 1 tsp ground cinnamon (optional)
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 60g dark chocolate chips

Instructions

  1. Preheat oven to 180°C (350°F). Grease a muffin tin or line with cases.
  2. In a mixing bowl, mash bananas until smooth. Stir in egg (or yogurt) and coconut sugar until well combined.
  3. Add oat flour, cinnamon (if using), baking powder, and baking soda. Mix until just combined—add a splash of milk if the batter is too thick.
  4. Fold in chocolate chips.
  5. Fill muffin holes with batter and bake for 15-20 minutes until a toothpick comes out clean.
