  • 240 g Oat Flour (or blended oats)
  • 30 g Cocoa Powder
  • 2 tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Salt
  • 250 g Apple Sauce
  • 1 Large Egg (or 1/4 cup soy yoghurt for vegan)
  • 40 g Coconut Sugar
  • 125 g Milk (dairy-free for vegan)
  • 1 tbsp Instant Coffee (optional)

Instructions

  1. Preheat the oven to 180°C (350°F) and line a loaf tin with baking parchment.
  2. In one bowl, mix together oat flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together applesauce, egg (or yogurt), coconut sugar, milk, and optional instant coffee.
  4. Combine wet ingredients with dry ingredients until just mixed; fold in chopped dark chocolate.
  5. Pour batter into the prepared tin and bake for 45–50 minutes or until a toothpick comes out clean.
  6. Cool in the tin for 10 minutes before transferring to a wire rack.
