  • ⅓ cup melted coconut oil (or extra-virgin olive oil)
  • ½ cup honey (or maple syrup)
  • 2 eggs (or flax eggs for vegan option)
  • ½ cup milk (or water)
  • 1 ½ cups grated zucchini
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon fine-grain sea salt
  • Optional: ¾ cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 325°F (165°C). Grease a 9” x 5” loaf pan.
  2. In a mixing bowl, combine melted coconut oil and honey; whisk until blended. Add eggs and mix well.
  3. Stir in milk, baking soda, cinnamon, salt, and nutmeg. Then add the grated zucchini.
  4. Gradually fold in the flour until just combined; some lumps are fine.
  5. Pour batter into the prepared pan and sprinkle with additional cinnamon if desired.
  6. Bake for 55–60 minutes until a toothpick inserted comes out clean.
  7. Allow cooling in the pan before slicing.
