Ingredients
Scale
1 tablespoon olive oil
12 ounces smoked sausage (sliced)
1 small onion (diced)
1 bell pepper (diced)
3 cloves garlic (minced)
1 cup long-grain white rice (uncooked)
1 can (15 ounces) black beans (drained and rinsed)
2 cups low-sodium chicken broth
1 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon dried oregano
½ teaspoon chili powder
Salt and black pepper to taste
¼ cup fresh cilantro (chopped)
1 lime (cut into wedges)
Instructions
In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned (about 5 minutes). Stir in the diced onion and bell pepper; cook until softened (3–4 minutes). Add minced garlic; sauté for an additional minute.
Add spices to the pan—cumin, smoked paprika, oregano, and chili powder—and stir to coat the sausage and vegetables. Mix in uncooked rice until all grains are coated.
Pour in chicken broth along with drained black beans; season with salt and pepper.
Bring to a boil; then reduce heat to low. Cover skillet and let simmer for about 20 minutes or until rice is cooked through.
Remove from heat; fluff rice with a fork. Garnish with chopped cilantro before serving.
