  • 4 boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper, to taste
  • 1 cup feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)
  • 1 lemon, sliced (for serving)

Instructions

  1. Prepare the marinade by whisking together honey, olive oil, red wine vinegar, garlic, oregano, red pepper flakes, salt, and pepper in a medium bowl.
  2. Place chicken in a resealable bag and pour the marinade over it. Seal and refrigerate for at least 30 minutes (preferably 2 to 4 hours).
  3. Preheat your oven to 400°F (200°C). In a small bowl, mix crumbled feta with olive oil and season with salt and pepper.
  4. Remove chicken from the marinade and place in a baking dish. Top each piece with the feta mixture.
  5. Bake for 25 to 30 minutes until cooked through (internal temperature of 165°F). Optionally broil for an additional 2–3 minutes for a golden finish.
  6. Let rest for 5 minutes before serving. Garnish with parsley and serve with lemon wedges.
