Ingredients

  • Iceberg Lettuce
  • Romaine Lettuce
  • Cherry Tomatoes
  • English Cucumber
  • Fresh Mozzarella
  • Salami
  • Provolone Cheese
  • Chickpeas
  • Pepperoncinis
  • Red Onion (optional)
  • Extra-Virgin Olive Oil
  • Red Wine Vinegar
  • Garlic
  • Dried Oregano
  • Dijon Mustard

Instructions

  1. Chop iceberg and romaine lettuces into bite-sized pieces. Dice tomatoes, cucumbers, mozzarella, provolone cheese, salami, and pepperoncinis. Optionally slice red onion.
  2. Rinse chickpeas and optionally toss with olive oil and spices for added flavor.
  3. In a large mixing bowl, combine all chopped ingredients along with chickpeas.
  4. In a small bowl or jar, whisk together olive oil, vinegar, garlic, oregano, mustard, salt, and pepper to make the dressing.
  5. Pour the dressing over the salad mixture and toss gently until well combined.
  6. Serve immediately topped with shaved Parmesan cheese.
