  • 2 carrots (roughly chopped)
  • 2 celery sticks (roughly chopped)
  • 6 cups chicken or vegetable broth
  • 1 Parmesan rind
  • 1 cup pastina pasta (or other small pasta)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper (to taste)
  • Fresh parsley (optional, for garnish)

Instructions

  1. In a large pot, combine chopped onions, carrots, celery, broth, and Parmesan rind. Bring to a boil over high heat.
  2. Reduce heat, cover, and simmer for 15-18 minutes until vegetables are tender.
  3. Use a strainer to remove vegetables from the pot; blend with about ½ – 1 cup of broth until smooth.
  4. Return the pureed veggies to the pot; add pastina and simmer for an additional 7-9 minutes until pasta is cooked.
  5. Season with grated Parmesan cheese, salt, and pepper to taste. Serve garnished with fresh parsley if desired.
