  • 2 small carrots (peeled & chopped)
  • 2 cups fresh baby spinach
  • 4 cans cannellini beans (drained)
  • 4 cups chicken broth
  • Italian seasoning (to taste)
  • Dried rosemary (to taste)
  • Salt & pepper (to taste)

Instructions

  1. In a large soup pot over medium-high heat, cook the Italian sausage and bacon until crispy (about 15 minutes). Transfer to a plate.
  2. In the same pot, sauté chopped onion until softened (3-5 minutes), then add minced garlic and cook for another 30 seconds.
  3. Add drained beans, chicken broth, Italian seasoning, and rosemary; stir well.
  4. Blend the soup using an immersion blender to your desired texture.
  5. Return the meats to the pot along with chopped carrots; bring to a boil then simmer for 15-20 minutes.
