  • 300 g Orzo (Kritharaki/Risoni)
  • 80-100 g Arugula
  • 250 g Cherry Tomatoes
  • 150 g Mozzarella
  • 40 g Sun-dried Tomatoes
  • 50 g Parmesan
  • 50 g Pine Nuts
  • 3 tbsp Olive Oil
  • Juice and zest of ½ organic Lemon
  • 1 Garlic Clove
  • Salt and Pepper to taste

Instructions

  1. Cook the orzo in salted boiling water until al dente, then drain.
  2. While the orzo cooks, halve the cherry tomatoes, cube the mozzarella, and chop the sun-dried tomatoes.
  3. Toast pine nuts in a dry pan over medium heat until golden brown.
  4. In a small bowl, whisk together olive oil, lemon juice, garlic (minced), salt, and pepper.
  5. In a large bowl, combine cooked orzo with cherry tomatoes, mozzarella, sun-dried tomatoes, arugula, and dressing. Mix well.
  6. Top with toasted pine nuts and freshly grated Parmesan before serving.
