  • 4 pounds bone-in chicken thighs (or drumsticks)
  • ¼ cup chopped scallions
  • 1 large onion, chopped
  • 2 large carrots, sliced
  • 1 bell pepper, chopped
  • 2 habanero peppers, minced
  • 2 tablespoons minced garlic
  • 3 tablespoons oil
  • 3 tablespoons ketchup
  • 1 tablespoon brown sugar
  • 4 cups water

Instructions

  1. Rinse chicken pieces under cold water and pat dry. Season with chicken bouillon, smoked paprika, black pepper, garlic, thyme, ginger, and habanero peppers. Marinate for at least 30 minutes.
  2. Heat oil in a large pot over medium-high heat. Sear marinated chicken pieces until golden brown on all sides (about 5-7 minutes per side). Set aside.
  3. In the same pot, sauté onions, carrots, bell pepper, and scallions until softened (approximately 5 minutes).
  4. Return seared chicken to the pot and add ketchup, brown sugar, bay leaves, and water. Stir well to combine.
  5. Bring to a boil; then reduce heat to low and cover. Simmer for about 50 minutes until chicken is tender.
