  • 6 cups chopped kale
  • 1 teaspoon olive oil – for massaging the kale
  • 1 cup cooked quinoa – cooled
  • 1 cup canned chickpeas – drained and rinsed
  • 1/3 cup diced red onion
  • 1/3 cup diced cucumber
  • 1/3 cup pepitas
  • 1/3 cup golden raisins
  • 1/3 cup crumbled feta cheese
  • 1/8 cup fresh chopped dill
  • 1/8 cup fresh chopped parsley
  • Olive oil and lemon juice (for dressing)

Instructions

  1. Rinse the kale under cold water. Dry thoroughly using a towel or salad spinner.
  2. Chop the kale and place it in a large mixing bowl. Massage with olive oil and salt for 1-2 minutes until tender.
  3. Add cooked quinoa, chickpeas, red onion, cucumber, pepitas, golden raisins, feta cheese, dill, and parsley to the bowl with kale.
  4. In a separate bowl, mix olive oil, lemon juice, salt, and pepper to create the dressing. Pour over the salad ingredients and toss well to coat.
  5. Serve immediately or refrigerate for up to an hour before serving to enhance flavors.
