  • 1 tbsp Olive oil
  • 1 small Yellow onion (diced)
  • 4 cloves Garlic (minced)
  • 4 cups Chicken broth (reduced sodium)
  • 1/2 cup Heavy cream
  • 1 4-oz can Green chiles (diced; drained)
  • 1 tsp Cumin
  • 1 tsp Dried oregano
  • 1/4 tsp Cayenne pepper (optional)
  • 1/2 tsp Sea salt (to taste)
  • 1/2 tsp Black pepper (to taste)
  • 8 oz Cream cheese (at room temperature, cut into small pieces)
  • 1 cup Mexican blend cheese (shredded)
  • 4 cups Shredded chicken

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Sauté diced onion for 5-7 minutes until soft.
  2. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.
  3. Stir in chicken broth, heavy cream, green chiles, cumin, oregano, cayenne pepper (if using), sea salt, and black pepper. Bring to a boil, then reduce heat and simmer for 40 minutes.
  4. Lower the heat and mix in cream cheese and shredded Mexican blend cheese until melted.
  5. Fold in shredded chicken and simmer for another 5 minutes. Adjust seasoning if needed.
