  • 12 lasagna noodles
  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 24 ounces marinara sauce
  • ½ cup yellow onion, diced
  • 3 cloves garlic, minced
  • ¼ teaspoon crushed red pepper
  • ½ teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • 16 ounces ricotta cheese
  • 1 large egg
  • ½ cup Parmesan cheese
  • 3 cups mozzarella cheese, divided
  • ¼ cup parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil and brown the ground beef. Add diced onion and garlic; cook until soft.
  3. Stir in crushed red pepper, salt, black pepper, Italian seasoning, and marinara sauce; simmer for 5 minutes.
  4. Cook lasagna noodles according to package instructions; drain and cool.
  5. In a mixing bowl, combine ricotta cheese, egg, Parmesan cheese, 1½ cups mozzarella cheese, and parsley.
  6. Spread ricotta mixture on each noodle, add meat mixture on top, roll up tightly.
  7. Spread some marinara sauce in a baking dish; place roll-ups seam side down.
  8. Cover with remaining meat sauce and mozzarella cheese; bake covered for 38 minutes, then uncover for another 2 minutes until golden.
