  • 1 lb lean ground beef or Italian sausage
  • 1 small yellow onion, diced
  • 5 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups marinara sauce
  • 15 oz can diced tomatoes
  • 8 lasagna noodles, broken into pieces
  • ½ cup grated mozzarella cheese
  • ½ cup ricotta cheese
  • Fresh herbs for garnish

Instructions

  1. In a large skillet over medium heat, brown the ground meat and drain excess grease.
  2. Transfer cooked meat to a slow cooker; add onion, garlic, broth, marinara sauce, diced tomatoes, and seasonings.
  3. Stir well and cook on low for 6–8 hours or high for 3–4 hours.
  4. In the last 30 minutes of cooking, stir in broken lasagna noodles until tender.
  5. Once cooked, mix in balsamic vinegar and grated parmesan. Season with salt and pepper.
  6. Serve hot topped with mozzarella, ricotta cheese, and fresh herbs.
