  • 1 tbsp Butter or Olive Oil
  • 250 g Carrots (peeled and grated)
  • 250 g Zucchini (grated)
  • 500 g Ground Lean Meat
  • 1 tbsp Minced Garlic
  • 1 tbsp Dried Oregano
  • 1 tsp Salt
  • 400 ml Tomato Sauce
  • 400 ml Beef Stock
  • 150 g Lasagna Sheets (broken)
  • 200 g Cottage Cheese
  • 150 g Grated Cheese

Instructions

  1. In a large pot over medium heat, melt butter or olive oil. Sauté grated carrots and zucchini for about 5 minutes until softened.
  2. Add ground meat, minced garlic, salt, and oregano. Cook until browned, breaking it apart with a spatula.
  3. Stir in tomato sauce and beef stock; let simmer for 10 minutes to enhance flavors.
  4. Break lasagna sheets into pieces and stir into the sauce. Cover and simmer for an additional 10–12 minutes, stirring occasionally.
  5. Once pasta is tender, mix in cottage cheese until melted and creamy.
  6. Top with grated cheese and cover until melted or broil for a golden finish.
  7. Let rest briefly before serving warm.
