  • 160 g ground almonds
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 50 g coconut oil (or neutral oil)
  • 150 g milk (dairy-free for vegan)
  • 150 g maple syrup
  • Juice and zest of 3 lemons
  • 1 tsp vanilla extract
  • 2 tbsp poppy seeds

Instructions

  1. Preheat the oven to 180°C (350°F) and line a loaf tin with parchment paper.
  2. In one bowl, mix together the dry ingredients: flour, ground almonds, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the wet ingredients: coconut oil, milk, maple syrup, lemon juice, and vanilla extract until smooth.
  4. Combine wet and dry mixtures gently; fold in poppy seeds and lemon zest without overmixing.
  5. Pour batter into the prepared tin and bake for approximately 45 minutes or until a toothpick inserted comes out clean.
  6. Allow cooling in the tin for five minutes before transferring to a wire rack.
