  • 350 g Split Red Lentils (1¾ cup)
  • 250 g Cottage Cheese (1 cup) or Firm Tofu
  • 1 tbsp Baking Powder
  • 250 ml Water (1 cup)

Instructions

  1. Soak the lentils in water for at least 6 hours or overnight.
  2. Drain and rinse the soaked lentils thoroughly.
  3. Blend soaked lentils, cottage cheese (or tofu), water, and baking powder until smooth.
  4. Preheat oven to 180°C (350°F) and prepare a 2lb loaf pan.
  5. Pour the batter into the pan, smoothing the top with a spatula.
  6. Bake for 60 minutes or until a toothpick comes out clean.
  7. Cool completely before slicing.
