  • 1 large carrot, grated
  • 1 small cucumber, diced
  • 1 bell pepper (red or yellow), diced
  • 1/2 cup corn (fresh or canned)
  • 1/4 cup almonds or cashews, roughly chopped
  • 2 scallions, sliced
  • A handful of fresh cilantro leaves, chopped
  • 1/4 cup olive oil
  • Juice and zest of 2 limes
  • 1-2 teaspoons honey or agave syrup (optional)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • A pinch of cayenne pepper (optional)

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, prepare the vegetables: grate the carrot, dice the cucumber and bell pepper, slice the scallions, and chop the cilantro.
  3. If using nuts, toast them in a dry pan over medium heat for about 2–3 minutes until fragrant.
  4. In a small bowl, whisk together lime juice and zest, olive oil, Dijon mustard, honey (if desired), salt, pepper, and cayenne.
  5. In a large bowl, combine cooled pasta with prepared vegetables, toasted nuts, and cilantro.
  6. Pour dressing over the salad and toss to coat evenly.
  7. Chill in the refrigerator for at least 15–20 minutes before serving.
