  • 2 large whole eggs
  • 2 large egg yolks
  • 100 g granulated sugar
  • 1 lemon (juiced)
  • 70 g unsalted butter (room temperature and cubed)
  • 225 g mascarpone cheese (softened)
  • 350 g whipping cream
  • 1 teaspoon vanilla extract
  • 225 g limoncello
  • 24 ladyfingers

Instructions

  1. In a mixing bowl, beat the whole eggs, egg yolks, and sugar until light and fluffy. Add lemon juice and butter, mixing until smooth. Gently fold in mascarpone until well combined.
  2. In a separate bowl, whip the cream with vanilla extract until stiff peaks form. Carefully fold into the mascarpone mixture.
  3. Quickly dip each ladyfinger into limoncello and layer them at the bottom of a baking dish.
  4. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining cream.
  5. Cover and refrigerate for at least 6 hours or overnight before serving.
