  • 3 pounds boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons minced garlic
  • ¾ cup low-sodium chicken broth
  • ½ cup heavy cream
  • ½ cup grated fresh parmesan cheese
  • 1 cup sun-dried tomatoes
  • salt (to taste)
  • freshly cracked black pepper (to taste)
  • 1 teaspoon dried oregano (more or less to taste)
  • ½ teaspoon crushed red pepper flakes (more or less to taste)
  • chiffonaded fresh basil
  • grated fresh parmesan cheese

Instructions

  1. 1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken until golden brown (5–7 minutes per side). Remove and set aside.
  2. 2. In the same skillet, sauté minced garlic until fragrant. Add chicken broth and scrape any browned bits from the pan.
  3. 3. Stir in heavy cream and parmesan cheese until combined. Add sun-dried tomatoes.
  4. 4. Return the chicken to the skillet, sprinkle with oregano and crushed red pepper flakes, and simmer on low heat for 10–15 minutes until heated through.
