  • 1 tablespoon matcha powder
  • 1 tablespoon milk powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 115 g unsalted butter (softened to room temperature)
  • 150 g granulated sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 100 g white chocolate (roughly chopped, plus a handful extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, stir together the all-purpose flour, matcha powder, milk powder, baking powder, baking soda, and salt until well combined. Set this mixture aside.
  3. In a large mixing bowl, use an electric hand mixer to beat the softened butter until creamy. Gradually add granulated sugar, mixing until fluffy—about 3-4 minutes.
  4. Add one large egg and one teaspoon of vanilla extract to the creamed mixture. Mix again until everything is well combined.
  5. Slowly add the flour mixture into the butter mixture, briefly mixing with your hand mixer until most of the flour is incorporated but some patches remain.
  6. Gently fold in roughly chopped white chocolate using a silicone spatula, being careful not to overmix.
  7. Using a 4-tablespoon ice cream scoop, scoop cookie dough onto your prepared baking sheet, leaving about 2 inches between each scoop.
  8. Bake the cookies for 12-14 minutes, until the edges are set but the center remains soft. Press some additional white chocolate chunks on top during the last two minutes of baking.
  9. Allow the cookies to cool on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.
