  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 6 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 32 oz. chicken broth
  • 28 oz. crushed tomatoes
  • 8 oz. uncooked rotini pasta
  • 2 cups baby spinach
  • 1/2 cup heavy cream
  • Kosher salt
  • Fresh cracked pepper

Instructions

  1. Prepare meatballs: Use homemade or thawed frozen meatballs.
  2. Sauté aromatics: Heat olive oil in a large pot, add onion, salt, and pepper; cook until slightly browned (6-8 minutes).
  3. Add garlic and seasoning: Stir in garlic, Italian seasoning, tomato paste; cook for 1 minute.
  4. Deglaze: Pour in chicken broth to scrape up browned bits.
  5. Combine: Add remaining broth, crushed tomatoes, pasta, and meatballs; season with salt and pepper.
  6. Simmer: Bring to a simmer; cover and reduce heat for about 12-15 minutes until pasta is cooked al dente.
  7. Finish: Stir in spinach and heavy cream until wilted.
