  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves minced garlic
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 large whole wheat or spinach tortillas
  • 1 cup hummus
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup kalamata olives, pitted and sliced (optional)
  • Fresh spinach or mixed greens

Instructions

  1. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Marinate chicken in the mixture for at least 30 minutes (up to 2 hours).
  3. Grill marinated chicken over medium-high heat for about 6–7 minutes on each side until cooked through.
  4. Let the chicken rest before slicing it thinly.
  5. Spread hummus on each tortilla; top with grilled chicken slices, cherry tomatoes, cucumber, red onion, feta cheese, and fresh greens.
  6. Roll up tightly and slice in half to serve.
