Ingredients

  • Boneless skinless chicken breasts
  • Medium zucchini
  • Olive oil
  • Fresh garlic
  • Lemon (juice and zest)
  • Oregano
  • Basil
  • Thyme
  • Parmesan or feta cheese
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Season chicken breasts with salt, pepper, and half of the herbs.
  3. Slice zucchini and toss with olive oil, garlic, lemon juice, zest, remaining herbs, salt, and pepper in a mixing bowl.
  4. Layer seasoned chicken in the center of the baking dish; arrange zucchini around it.
  5. Bake for 25-30 minutes until the chicken reaches 165°F (75°C). Add cheese during the last 5 minutes if desired.
  6. Let rest for 5-10 minutes before serving.
