  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • 1/2 tsp sweet paprika
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, garlic, oregano, basil, thyme, paprika, salt, and pepper until well combined.
  2. Place chicken breasts in a resealable bag or shallow dish. Pour marinade over the chicken and ensure each piece is fully coated. Refrigerate for at least 30 minutes or up to 24 hours.
  3. Preheat your grill to medium-high heat. Clean and lightly oil the grates.
  4. Remove chicken from the marinade (discarding the used marinade) and grill each breast for about 6-7 minutes per side or until the internal temperature reaches 165°F (74°C).
  5. Allow the chicken to rest for about 5 minutes before slicing to retain moisture.
