  • 500 g Skinless, Boneless Chicken Breast
  • 1 can Black Beans (15 oz)
  • 1 can Sweetcorn (150 g)
  • 4 Vine Tomatoes
  • 60 g Cheese (grated)
  • 2 cups Fresh Cilantro
  • 2 tbsp Lime Juice
  • 250 g Yogurt
  • 40 g Honey
  • 2 Garlic Cloves
  • Lettuce (roughly chopped)
  • Jalapeños (sliced)

Instructions

  1. Cook the Chicken: Season raw chicken with taco seasoning. Cook in an air fryer at 350°F for 15–20 minutes or pan-fry over medium heat for 6–8 minutes per side. Allow to rest before slicing.
  2. Blend the Dressing: In a blender, combine cilantro, lime juice, yogurt, honey, garlic, and salt. Blend until smooth; adjust seasoning if needed.
  3. Assemble the Salad: In a large bowl, start with lettuce as the base. Layer sliced chicken, black beans, sweetcorn, chopped tomatoes, grated cheese, and jalapeños.
  4. Dress It Up: Drizzle the dressing over the salad just before serving and toss gently if desired.
