  • 1 medium onion (chopped)
  • 2 sticks celery (chopped)
  • 3 medium carrots (peeled & sliced)
  • 3 cloves garlic (minced)
  • 1 small zucchini (chopped)
  • 1 cup fresh green beans (chopped)
  • 28 oz can crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 14 oz can red kidney beans (drained)
  • 14 oz can white kidney beans (drained)
  • 3/4 cup uncooked elbow macaroni
  • Olive oil
  • Butter
  • Italian seasoning
  • Salt
  • Pepper
  • Fresh basil
  • Parmesan cheese

Instructions

  1. Sauté the onion, celery, carrots, and garlic in olive oil and butter in a large pot for 7-10 minutes until softened.
  2. Add crushed tomatoes, broth, zucchini, green beans, both types of beans, and Italian seasoning. Bring to a boil.
  3. Reduce heat and simmer covered for 10 minutes.
  4. Stir in the elbow macaroni and cook for an additional 15-20 minutes until pasta is tender.
  5. Season with salt and pepper before serving. Garnish with fresh basil and parmesan cheese if desired.
