  • 2 medium apples (peeled, cored, diced)
  • ⅓ cup brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp allspice
  • ¼ tsp ground ginger
  • Pinch of salt
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch slurry
  • 1 package premade pie dough (contains 2 crusts)
  • 1 beaten egg (for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix diced apples with brown sugar, cinnamon, nutmeg, allspice, ginger, salt, butter, vanilla extract, and cornstarch slurry until well combined.
  3. Roll out the pie dough on a floured surface to about 1/8 inch thick and cut into circles.
  4. Place dough circles in greased muffin tin cavities and fill with the apple mixture. Top with another dough circle and seal edges; brush tops with egg wash.
  5. Bake for about 25 minutes until golden brown.
