  • 2 big onions, caramelized
  • 4 eggs
  • 1/2 cup cream

Instructions

  1. For the crust: In a mixing bowl, combine flour and chilled butter until crumbly. Gradually add ice-cold water until dough holds together. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Sauté onions in olive oil over medium heat until caramelized. Add mushrooms and seasonings; cook until tender.
  3. Whisk eggs and cream in a separate bowl; mix in herbs and cheese.
  4. Preheat oven to 375°F (190°C). Roll out the dough into a pie dish and layer sautéed vegetables inside. Pour custard mixture over top.
  5. Bake for 45-50 minutes until set and golden.
