  • 3 tomatoes
  • 1 red bell pepper
  • 1 habanero pepper (adjust for spice level)
  • 1 onion
  • ½ cup olive oil
  • 1 cup chicken stock
  • 1 tsp bouillon powder
  • ½ tsp thyme
  • ½ tsp black pepper
  • ½ tsp curry powder
  • ½ tsp salt
  • extra salt and black pepper (for the chicken rub)

Instructions

  1. Prepare the Chicken: Wash and dry the chicken. Rub with salt and black pepper; set aside.
  2. Brown the Chicken: Heat olive oil in a large skillet over medium heat. Brown chicken on both sides (about 10 minutes). Remove from skillet.
  3. Make Sauce Base: Chop half the onion. Blend tomatoes, red bell pepper, habanero pepper, and remaining onion until smooth.
  4. Cook Sauce: In the same skillet, sauté chopped onion until translucent. Add blended mixture; boil for about 5 minutes.
  5. Combine Ingredients: Return chicken to skillet, add chicken stock and seasonings; stir well.
  6. Simmer: Cover and cook for about 20 minutes or until chicken is tender.
