  • 1 cup diced yellow onion
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 5 cloves garlic, minced
  • 8 cups chicken broth
  • 8 oz uncooked elbow macaroni
  • 1 cup heavy cream
  • 8 oz shredded sharp cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C). Spread diced sesame seed buns on a baking sheet, drizzle with olive oil, and bake until crispy (about 10 minutes).
  2. In a large pot over medium heat, brown the ground beef with oregano, thyme, salt, and pepper; set aside.
  3. In the same pot, melt butter and sauté onions, carrots, and celery until tender (around 10 minutes). Stir in garlic and remaining herbs for another minute.
  4. Add flour to thicken the mixture; then deglaze with a little chicken broth.
  5. Pour in the rest of the broth and macaroni; bring to a simmer and cook until pasta is al dente (5–7 minutes).
  6. Remove from heat and stir in heavy cream and cheddar cheese until melted.
  7. Return cooked beef to the pot; season to taste before serving topped with bun croutons and garnishes.
