  • 1 cup diced onion
  • 2 tablespoons minced garlic
  • 1 cup quartered carrots
  • 2 (15 oz) cans cooked cannellini beans, rinsed and drained
  • 1 (15 oz) can tomato sauce
  • 4 cups low sodium vegetable broth
  • 1 cup dry ditalini pasta
  • Dried herbs: basil, parsley, oregano
  • Red pepper flakes

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion for 3-4 minutes until translucent.
  2. Stir in minced garlic and quartered carrots; cook for another 3 minutes.
  3. Add cannellini beans, tomato sauce, vegetable broth, water, dried bay leaf, basil, parsley, oregano, black pepper, and red pepper flakes.
  4. Bring to a gentle boil then reduce heat to low and simmer uncovered for about 15 minutes.
  5. Stir in dry ditalini pasta and cook for an additional 10 minutes until pasta is tender.
  6. Remove from heat and discard the bay leaf before serving.
