  • 1 tbsp olive oil
  • 400g sausages (any flavor)
  • 1 onion, chopped
  • 2 stalks celery, sliced
  • 2 carrots, sliced
  • 3 potatoes, peeled and cut into chunks
  • 375ml single cream or half-and-half
  • 1 litre chicken or vegetable stock
  • 100g wild rice
  • Salt and dried thyme to taste

Instructions

  1. Heat olive oil in a soup pot over medium heat. Remove sausage from casings and break it up in the pot. Cook until browned, then set aside.
  2. In the same pot, sauté onion, celery, and carrots until softened. Stir in garlic and thyme for a minute before adding flour to form a roux.
  3. Gradually mix in chicken stock along with bay leaves and wild rice; bring to a simmer for about 30 minutes.
  4. Add cubed potatoes and continue cooking until tender. Stir in cream, season with salt, and serve hot.
