  • 1 kg fresh pumpkin (2 pounds ripe and sweet)
  • 2 medium carrots, chopped
  • 2 tablespoons butter
  • 1 teaspoon oil
  • 1 medium onion, chopped
  • 1 tablespoon garlic, minced
  • 4 cups vegetable or chicken stock
  • 2 sprigs thyme
  • 1/2 cup cream
  • Salt and pepper to taste

Instructions

  1. Prepare the pumpkin by skinning, deseeding, and chopping it into small cubes.
  2. In a heavy bottom pan, melt butter and oil over medium heat. Sauté onion and garlic until softened.
  3. Add chopped carrots and cubed pumpkin; roast for about 10-15 minutes.
  4. Stir in the stock along with thyme, salt, and pepper; cover and cook until vegetables are tender.
  5. Remove thyme sprigs and blend the soup until smooth using a hand blender.
  6. Return to low heat, stir in cream, and serve warm.
