  • 1/2 cup unsalted butter (melted)
  • 1 1/4 cups granulated sugar
  • 2 eggs
  • 3/4 cup buttermilk
  • 1 tbsp pumpkin pie spice
  • For streusel: 6 tbsp cold unsalted butter
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
  2. In a bowl, mix streusel ingredients until crumbly; set aside.
  3. Whisk together the dry muffin ingredients in one bowl.
  4. Combine melted butter, sugar, eggs, vanilla, pumpkin puree, and buttermilk in another bowl until smooth.
  5. Gradually add the dry ingredients to the wet mixture; stir gently until just combined.
  6. Fill muffin cups two-thirds full with batter and sprinkle with streusel topping.
