  • 4 garlic cloves (minced)

  • 4 cups vegetable broth
  • 4 large potatoes (peeled and chopped)

  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 8 minutes. Stir in the minced garlic and cook for an additional minute.
