  • 4 medium jalapeños
  • 1 tablespoon olive oil
  • 4 ounces cream cheese
  • ½ teaspoon garlic salt
  • ¼ teaspoon black pepper
  • ½ teaspoon onion powder
  • 1 cup mild cheddar cheese, shredded
  • 6 strips bacon, cooked
  • 4 slices Texas toast
  • 4 tablespoons unsalted butter

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. Halve and seed the jalapeños, then brush with olive oil and roast for about 15 minutes until slightly charred.
  3. In a bowl, mix the room temperature cream cheese with garlic salt, black pepper, and onion powder until smooth.
  4. Chop the roasted jalapeños and fold them into the cream cheese mixture.
  5. Butter one side of each slice of bread. Spread half of the cream cheese mixture on the unbuttered side of two slices, top with bacon and cheddar cheese, then place another slice on top (buttered side out).
  6. Heat a cast iron skillet over medium heat and cook sandwiches for 3-5 minutes per side until golden brown and the cheese is melted.
